This weekend I made peanut butter and jam muffins and by using one special ingredient, it took these muffins to the next level! That ingredient I’m talking about is Bonne Maman Jam. This jam is not like any other jam. It contains a high level of real fruit content which gives a rich flavour from the natural fruit sugars. It also has no colourings, no preservatives and no artificial flavourings. And I must add, the packaging is super cute! I will for sure be re-using these facetted jars in a future DIY project. OK, back to the muffins! This recipe is really easy and you’ll be able to make a batch in about 30mins. Let me warn you though; you won’t be able to eat just one!
Ingredients
1 cup of milk
1/2 cup creamy peanut butter
1/2 sugar
1 large egg
2 tablespoons oil
1 1/2 teaspoon vanilla
1/4 teaspoon cinnamon
1 3/4 cup of all purpose flour
1 teaspoon baking soda
2 teaspoon baking powder
1/2 cup Bonne Maman strawberry jam
Recipe
- Preheat oven at 375 degres fahrenheit. Spray your muffin pan with non-stick spray
- Whisk together the milk, peanut butter and sugar in a large bowl. Then add in the egg, oil, vanilla and cinnamon. Continue to whisk until well blended
- Add the flour, baking soda and baking powder in to the bowl, mixing until smooth
- Use about 1 tablespoon to fill the bottoms of a muffin pan. Place another tablespoon or so of the Bonne Maman jam into the centre of the bater, pushing it into the middle and then top off with more muffin mixture. Pan should be 3/4 full.
- Top muffins with a teaspoon of peanut butter and jam. Take a toothpick and swirl the two together
- Bake muffins for 15mins. Let cool before removing muffins
